Happy February

It was so nice to have dinner ready for me when I got home from water aerobics. Cass made Italian chicken pesto pizza and it was delicious. Here is the recipe:
Ingredients
½ cup low fat Italian dressing (for marinade)  
2 cups chicken; marinated, cooked, diced
2 (9 inch) loaves focaccia bread, prepared
or one large pizza crust
1 (8 oz.) reduced-fat cream cheese, softened
4 tablespoons pesto sauce
2 roma tomatoes, sliced
½ cup yellow bell pepper, julliened
2 medium green onions, sliced
1 tablespoon chopped fresh basil or 
½ teaspoon dried basil leaves
2 cups shredded Italian 4 cheese blend
2 tablespoons grated parmesan cheese
Yield:  8 slices

Directions:
Chicken
  • Place the raw, thawed chicken in a zip lock bag with the Italian dressing.  Marinade for 1 hour in the refrigerator.  
  • Preheat the oven to 375°F.  Place the marinated chicken breast in a glass baking dish and bake until the internal temperature is 170°F (about 30-35 minutes).
Pizza
  • Preheat oven to 450°F.
  • Place both loaves of focaccia bread on a cookie sheet lined with parchment paper.
  • Soften the cream cheese in the microwave oven for 20-30 seconds and use a rubber scrapper to spread it over both loaves within ¼ inch of the edges.  Gently spread pesto over cream cheese.
  • Dice the chicken and top the pizzas with it.
  • Wash and prepare all vegetables.  Top the pizzas with the tomato slices, julliened yellow bell pepper, and sliced green onions.
  • Sprinkle with basil, shredded cheese, and parmesan cheese.
  • Bake for 7-12 minutes or until the pizzas are hot and cheese is melted.

Another Busy Sunday

Well, we have had another busy Sunday!  Dylan made this robot head the other day plus the t-shirt and I know I have already posted this picture but I wanted to compare it to his other robot head.

Michael got home last night after being gone for 4 days so I got up and made breakfast for the family.

Finally, the carpet is coming tomorrow for the family room and Cass and Dylan will be getting their carpet also.  Today was the day to pull up the carpet in the family room.

I made time this afternoon to make brownie batter chocolate chip cookies and I also put a big pot of ham and beans on the stove.
Pretty soon we are off to go see some basketball games and we will not be home until 10pm.  That  is way past my bedtime!!

Movie Time

Tomorrow is a very important day! Yes, it is Oscar Nomination Day!!!  Tonight my friends Vicki and Stacey saw THE DESCENDANTS with me and loved it.  Since it won a Golden Globe it is almost guaranteed that it will be up for an Oscar and I am required to see all Oscar nominated movies before the Oscar party.
Wonder how many movies I have already seen that will be nominated tomorrow??  So excited!!!!

No Time for Rest

Today has been very busy and there was no time to just sit and do nothing!

This morning we went to the Sports Show and Michael, Dylan and Cass went scuba-diving for the first time and they all loved it!!

When we got home I made southwest chicken chili (without the green peppers) and I put it in the crockpot.


Then I made browned butter crinkles for dessert. (actually they are for my friends at work)


We also had two basketball games this evening.  One great game and one not so great game and now we are all tired!!  Go #52

Dinner Time

Tonight we had plans to go to "Beer Kitchen" with Ann and Ricky but they had an hour wait and we were not in the mood to wait that long.  We ended up across the street at "McCoy's Public House" and I had a really good cheeseburger.

The kegs in the background are a nice touch to the picture.

NIKE Shoes

Cass finally got her NIKE shoes she designed all by herself.  I love that they say AIR CASS on them.


Maybe she should go work for NIKE.
